Ritz S’mores Cookies

48 Ritz Crackers7 ounces Marshmallow Crème24 ounces Chocolate Almond Bark1 cup Graham Crackers crushedMarshmallow Bits optionalMini Chocolate Chips optional

In a microwave-safe bowl, melt chocolate almond bark, in 40-second intervals, stirring after each interval, until completely melted.

Place Ritz’s crackers on a long sheet of wax paper.

Add a small dollop of marshmallow crème to the center of half the crackers and smooth out.

Place another cracker on top of the marshmallow crème. Press crackers together, ensuring the marshmallow crème has been distributed evenly.

Use tongs, or a place on a fork, to grab a cracker sandwich and dip it into melted chocolate.

Carefully tap tongs on the side of the bowl, removing extra chocolate from the crackers.

Place dipped cracker onto the wax paper.

Sprinkle graham cracker crumbles, tiny marshmallows, and mini chocolate chips on top, if you choose before the chocolate dries.

Allow chocolate to harden.

Store in an air-tight container for up to 5 days.

Filling Tip: Don’t add too much marshmallow filling – you only need a small amount. If you add too much, the marshmallow crème will ooze out and mix with the chocolate coating when you dip the cookies.
Melting Tip: Melt the almond bark in short intervals, stirring between each. There should be instructions on the package so be sure to follow them.
Wax Paper: I recommend using wax paper instead of parchment paper. Once the cookies are set, they are really easy to remove from the wax paper.
Storage Tip: Once the chocolate has hardened, store the Ritz s’mores cookies in an airtight container. They will keep well for up to five days.
Can You Use Marshmallows For The Filling?Yes, but you will need to bake the cookies in order for it to work.
Cut a large marshmallow marshmallow in half and place one half on a cracker. Bake them for two minutes at 350°F or just until the marshmallows start to melt.
Place the other cracker on top and gently press so the melted marshmallow squeezes to the edges.
