Sugar Cookie Crust Ingredients
Softened unsalted butter – remember to leave it out at room temperature before you start making the dough. Cream Cheese Frosting Ingredients
Softened cream cheese – like the butter for the crust, leave the cream cheese out at room temperature. This will ensure your frosting is nice and creamy!Softened unsalted butterVanilla extractPowdered sugar – if your sugar has a lot of lumps, sift it first before measuring it so your frosting ends up nice and smooth.
After you clean the fruit be sure to pat it dry so there’s no excess water. For canned fruit, it should be thoroughly drained and patted dry.

The best fruit for fruit pizza is low-water content fruit. Juicy watery fruit (like watermelon, for example) will make your pizza soggy so stick to fruit that’s not so watery.
Also, any fruit that browns quickly, like bananas, is also not recommended.
Depending on your tastes, you can switch the fruit listed to other types like fresh peaches, grapes, mango, pineapple, or melon like cantaloupe or honeydew.
Sliced fruit does look pretty on the pizza but I find it makes it harder to slice into wedges. So, I recommend chopping or dicing larger pieces of fruit (like the strawberries and kiwi) – they will still look nice and your pizza will look nice even after you slice it. Small fruit like berries don’t need to be sliced.
I don’t recommend using frozen fruit for cookie pizza. First, it just doesn’t look as pretty once it’s thawed and, also, it has more moisture that can make your pizza soggy.

I like to use a 12” pizza pan that is rimmed. I don’t recommend using a pan without a rim because you need sides to keep the crust uniform.
You can also use a 10×15” rectangle baking pan for this recipe – just press the sugar cookie dough into it and bake it for about the same amount of time.
Crust: Make the cookie dough and then press it into the pan. Bake the crust until it’s lightly browned on top. Cool the crust completely before adding the frosting.
Frosting: Cream the butter and cream cheese until smooth. Add the powdered sugar and vanilla and beat until combined.
Decorate! Spread the cream cheese topping over the crust. Decorate with the fruit and then chill the fruit pizza until you’re ready to serve it.
If you want to get a head start, you can make parts of this recipe a day in advance!
You can make and bake the crust and then cool it to room temperature. Cover it tightly with plastic wrap and store it in the refrigerator overnight.
You can also make the frosting a day ahead and store it in an airtight container in the refrigerator.

Sugar Cookie Crust:
1 cup unsalted butter softened1 cup granulated sugar1 teaspoon vanilla1 large egg½ teaspoon Kosher salt2 teaspoons baking powder2 ¾ cups all-purpose flour
Cream Cheese Topping:
8 ounces cream cheese softened¼ cup unsalted butter softened½ teaspoon vanilla extract2 cups powdered sugar
Fruit:
1/2 cup diced strawberries1/2 cup blueberries1/2 cup blackberries1/2 cup raspberries¼ cup chopped kiwi about 1-2½ can mandarin oranges 15 ounce can, drained (* see note)
Preheat the oven to 350 degrees Fahrenheit.
In a large mixing bowl, cream butter and sugar with a hand mixer or stand mixer, until light and fluffy, about 2 minutes.
Add vanilla and egg to creamed mixture and mix for another 30 seconds or so.
Add salt, baking powder, and flour to creamed mixture, just until combined.
Press the dough into a 12-inch pizza pan, in an even layer.
Bake for 14-16 minutes in the preheated oven at 350 degrees Fahrenheit or until lightly browned.
Cool the crust completely before moving on to the next step.
To make the topping, beat cream cheese and butter with a hand mixer or stand mixer until smooth, about 2 minutes.
Add powdered sugar and vanilla extract and beat until fully combined.
Spread in an even layer over the cooled crust. Decorate with fruit. Refrigerate until ready to cut and serve.
