Where has this summer gone? Now, August is knocking on the door. Summer holidays are slipping by and next things are Labor Day and Stevens County Fair. I really won't miss the humidity at all, though. It seems to me that we have a worse humidity season every year since the summer before. Crops look wonderful, though. I didn't have any brilliant ideas this week, so I'll do a little of this and a little of that.

Onion Salisbury Steak

1 lb. lean ground beef

1/2 tsp. salt

1/4 tsp. pepper

2 medium onions, thinly sliced

4 slices bread, toasted

1/4 C. flour

1 - 1 1/2 C. water

1 T. beef bouillon granules

In a bowl, combine beef, salt and pepper; shape into four oval patties. In a skillet, brown patties on one side. Turn and add onions. Cook until meat is no longer pink. Place toast on serving plates. Top each with onions and a beef patty; keep warm. Stir flour into skillet until blended. Gradually add water; stir in bouillon. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Serve over meat and onions. 4 servings.

Mock Lobster

1 - 1 1/2 lbs. frozen cod or haddock fillets, partially thawed

1 1/2 tsps. salt

2 tsps. seafood seasoning or paprika

3 T. vinegar

Melted butter or margarine

Lemon wedges

Cut fillets into 2x2 inch pieces; place in a skillet. Cover with water. Add salt and seasoning; bring to a boil. Reduce heat; simmer uncovered, for 10 minutes. Drain. Cover with cold water. Add vinegar and bring to a boil. Reduce heat; simmer uncovered, for 10 minutes. Drain. Serve with melted butter and lemon. 4-6 servings.

Colorful Garden Salad

1-2 medium cucumbers, sliced

1 medium tomato, sliced and quartered

6 fresh mushrooms, sliced

4 radishes, sliced

4 slices red onion

4 C. torn salad greens

1/4 C. oil

5 tsps. vinegar

5 tsps. sugar

1/4 tsp. salt

1/8 tsp. pepper

2 T. crumbled, cooked bacon

In a large bowl, combine the first 6 ingredients. In a small bowl, combine oil, vinegar, sugar, salt and pepper; mix well. Pour over salad and toss to coat. Top with crumbled bacon. 4-6 servings.

Biscuit Apple Cobbler

1 can (21 oz.) apple pie filling

1/2 tsp. cinnamon

1 tube (6 oz.) refrigerator flaky buttermilk biscuits

Whipped topping and mint, optional

Place pie filling in an ungreased 9-inch pie plate. Sprinkle with cinnamon. Separate each biscuit into 3 layers and arrange over apples. Bake at 400° for 12-14 minutes or until the biscuits are browned.

Garnish with whipped topping and mint, if desired. 4-6 servings.
