Having lounged for the past week at SCMC, I'll see if I'm re-charged yet and can come up with a column for this week. A couple of weeks ago, I was looking for some "different" recipes for frostings/icings, instead of the usual chocolate, cream cheese, etc. I did find these and they sound pretty darn good (and short). I'll have to give them a try.

Cinnamon Coffee Frosting

1 tsp. instant coffee granules

1/2 tsp. cinnamon

1 pinch salt

1 tsp. vanilla

1/2 C. butter, softened

3 C. powdered sugar

1/3 C. milk

In a small bowl, mash instant coffee with the back of a spoon until powdery. Stir in the cinnamon and salt. In a large bowl, beat the butter until smooth, then stir in spice mixture and vanilla. Alternately beat in the powdered sugar and milk, until desired consistency is reached.

Speedy Rum Frosting

1/4 C. butter, melted

3 1/2 C. powdered sugar, sifted

1/4 tsp. salt

5 T. heavy whipping cream

1 tsp. vanilla

2 1/2 tsps. rum extract

1 pinch allspice

1 pinch nutmeg

1 pinch cloves

Whisk butter in a large bowl until fluffy. Gradually add 1 cup of the sifted sugar, beating well. Slowly beat in the salt and cream. Gradually beat in the remaining 2 1/2 cups of powdered sugar. Continue to beat until the frosting begins to thicken; whisk in the vanilla, rum extract and spices. Allow to sit for 15 minutes before using.

Jerry is recovering from day surgery when a nurse asks him how he's feeling. "I'm OK, but I didn't like the four-letter-word the doctor used in surgery," he answered. "What did he say," asked the nurse. "OOPS!"

Gingerbread Frosting for Cookies

1/2 C. powdered sugar

1 T. milk

1/2 tsp. cinnamon

1/4 tsp. cloves

1/4 tsp. ginger

Place the powdered sugar in a bowl; stir in the milk until smooth. Mix in the spices until thoroughly blended. Spread on cooled cookies.

Deli Frosting

1 C. shortening

1/2 C. butter

1 1/2 T. vanilla

2 lbs. powdered sugar

1/8 tsp. salt

4 T. water

In a heavy duty mixer, combine the shortening, butter (or margarine), vanilla and water. Add the sugar and salt; beat until well mixed. Add a T. or 2 more of water, if needed. Turn mixer to highest speed and beat for 15 minutes.
