With all the veggies out there this time of year, I thought I'd concentrate on them this week; some frozen vegetables could be used, also.

Tangy Tomato Slices

6 tomatoes, thinly sliced

1 onion, thinly sliced

1 C. oil

1/3 C. vinegar

1/4 C. fresh parsley, chopped

3 T. fresh basil, chopped

1 T. sugar

1 tsp. salt

1/2 tsp. pepper

1/2 tsp. dry mustard

1/2 tsp. garlic powder

Layer tomato slices and onion slices in a 9x13 inch baking dish; set aside. Combine oil, vinegar, and seasonings in a small bowl; mix well and pour over tomatoes. Cover and chill 4-5 hours.

Sweet and Sour Cabbage

4 C. shredded cabbage, packed

1/3 C. cider vinegar

1 C. water

1 T. oil

1/3 C. sugar

salt and pepper

Mix all ingredients together in saucepan. Cook slowly, stirring occasionally, for 45 minutes. Serves 3-4.

Parmesan Baked Potatoes

6 T. butter or margarine, melted

3 T. grated Parmesan cheese

8 medium unpeeled red potatoes, halved lengthwise

Pour butter into a 9 x 13 inch baking pan. Sprinkle Parmesan cheese over butter. Place potatoes with cut side down over cheese. Bake uncovered, at 400° for 40-45 minutes or until tender.

Cream Peas

2 C. frozen green peas, thawed

2/3 C. water

1/8 tsp. salt

3 T. butter

1/3 C. heavy cream

2 T. flour

1 T. sugar

In a medium saucepan, combine peas, water, and salt. Bring to a boil, then stir in butter. In a small bowl, whisk together cream, flour, and sugar. Stir mixture into peas. Cook over medium-high heat until thick and bubbly, about 5 minutes.

A long time since I've used a blonde joke:

A Russian, an American, and a Blonde were talking one day. The Russian said, "We were the first in space!" The American said, "We were the first on the moon!"

The Blonde said, "So what? We're going to be the first on the sun!" The Russian and the American looked at each other and shook their heads. "You can't land on the sun, you idiot! You'll burn up!" said the Russian.

To which the Blonde replied, "We're not stupid, you know. We're going at night!"
